Foraging for and cooking Hawk’s Wing (Sarcodon imbricatus). This is a mycorrhizal mushroom that associates with spruce. They have a dense meaty texture but older specimens can be bitter. I really like the Shingled Hedgehogs in Colorado, but they have not been tasty when I tried them elsewhere. I do appreciate their texture and nuanced flavor, I was glad I to have found enough to cook some up.
